I will admit that over the past few months with being quarantined at home, this delicious spaghetti with a twist of Indian masalas has become one of our most favorite dishes at home. I love spaghetti's and it's a big hit with my almost three year old toddler. Every time I ask her what she wants to eat and her immediate answer is spaghetti 🙂
Over the years, I have tried making spaghetti at home in many different versions. My absolute favorite has been the olive oil and garlic combo, which is a quick recipe and it tastes so good. In this recipe, I skip the usual garlic roasted marinara sauce that I often use for all my pasta dishes like this one here and make the entire base for the spaghetti using authentic Indian masalas like turmeric powder, coriander powder, and a freshly cut tomato puree.

INGREDIENTS TO COOK
- 2 tablespoons olive oil
- 2-3 minced garlic cloves
- 1 medium onion (chopped or thin slices)
- 1 medium green pepper (chopped or thin slices)
- 1 1/2 tomato (chopped)
- 1/2 cup carrots (chopped or thin slices)
- 1/4 cup peas
- 1/4 cup beans
- 1 tablespoon turmeric powder
- 1/2 tablespoon paprika powder
- 1 tablespoon coriander powder
- 1/2 tablespoon fenugreek leaves
- Salt to taste
- 1 lb spaghetti pasta
- Oregano (for seasoning / optional)

INSTRUCTIONS TO COOK
PREPARING THE PASTA
Bring a big bowl of water to a boil in a pan. Add the spaghetti with 1 tsp of salt to the boiling water and 1/2 teaspoon of olive oil. The salt adds flavor to the pasta and the oil prevents the pasta from sticking together. Let the pasta boil till its tender and soft to eat. Then drain the pasta and set aside.
COOKING THE SPAGHETTI SAUCE / MASALA
- In a pan, saute 2-3 finely minced garlic cloves in olive oil until it starts to turn slightly brown
- Add turmeric powder, fenugreek leaves and coriander powder to the garlic cloves
- Add all the chopped vegetables to the pan and let it saute for 5 minutes till the entire mixture starts to wilt
- Next, add the chopped tomatoes and let the mixture cook together
- Add salt
FINAL STEP
As the last step, all you have to do is mix the drained spaghetti and the spaghetti sauce in the pan till it is completely covered with the sauce. Season with oregano for taste.
