These days I am completely hung up on eating healthy. I am not sure if it’s a phase but I am loving this new me. I am always looking for healthy swaps to the usual food we eat at home and I am surprised as to how much the healthy tastes good too.

Being an Asian, I grew up with rice and beans showing up in mostly all my food. One of the cuisines that we enjoy a lot at home is the Mexican food as it’s so close to our taste buds as well as it matches most of the ingredients that we use in our usual cooking. 

As a mom of a toddler, I am always looking for healthy and easy to make recipes that I can spin-off in the kitchen and bring it to the table in as little time as possible so that I can well utilize my time on other important things as well.

After the zoodles recipe that is a big hit with Mishika as well as with all of you, my second big vote would go to these healthy and nutrients packed vegetables tortilla wraps.

They are so easy to make, have so many greens in them and the best thing is that you can have a lot of fun with them by mixing it up with different things you like. This recipe here is prepared with beans and vegetables but you can customize it as per your taste and add other ingredients like tofu or meat in it.

VEGGIE TORTILLA WRAPS

QUICK VEGGIE TORTILLA WRAPS

Grilled veggie tortilla wraps made with black beans, purple cabbage and salad. Super quick and so easy to make!

INSTRUCTIONS

VEGGIE FILLING FOR THE TORTILLA WRAP

  1. In a pan saute the squash, red peppers and zucchini using olive oil. You can also grill them if you want.
  2. Add salt and pepper to the sauteed veggies for taste.
  3. Open the can, strain and clean the beans using a strainer. I have used the Cannellini beans but the red or black beans will taste great as well
  4. Keep lettuce and purple cabbage handy. You can also buy the salad mix from your grocery store which can save you time and they are so easy to useSautee the veggies

PREPARE THE TORTILLA WRAP

ASSEMBLE THE TORTILLA WRAPS

Once the tortilla wraps are ready and out of the microwave, keep a layer of beans on it. Followed by sauteed veggie mix (squash, zucchini, peppers) and then sprinkle with onions and tomatoes. Top this off with guacamole and sour cream for taste and the veggie tortillas are ready to be eaten!
