Healthy, tasty and simple four ingredients easy to make brown rice penne pasta!
Ever since I can remember, I have loved food. As a child, I use to love spending a lot of time in my household kitchen and watch my mom cook flavored Indian spices in a delicious curry! I loved the aroma that would linger in our entire home once the food was prepared. If I have to name one dish that I can eat over and over again, it would be pasta. I love creating new recipes with them with different ingredients and flavored spices and I am always amazed how just changing a few spices and ingredients with the same pasta, can bring a completely new life to it!
Today I am very excited to share with you all my most favorite and so easy to make with simple ingredients brown rice penne pasta. Whenever I am too lazy to cook or if I am cooking for myself alone, this pasta recipe is my go-to dinner.

INGREDIENTS TO COOK
- 1 medium onion (chopped)
- 1/2 cup beans (washed and boiled)
- 1/2 cup corns (washed and boiled)
- 2-3 minced garlic cloves
- 1 cup brown rice penne pasta
- 1 cup vegetable broth
- 2 tablespoons olive oil
- Badia complete seasoning (as per taste)
- 1 tablespoon turmeric powder
- Salt to taste

PREPARING THE PASTA
Bring a big bowl of water to a boil in a saucepan. Add the penne pasta with 1/2 tsp of salt and olive oil to the boiling water. The salt adds flavor to the pasta. Let the pasta boil till its tender and soft to eat. Then drain the pasta and set aside.
COOKING THE PASTA
- In a pan, saute 2-3 finely minced garlic cloves in olive oil until it starts to turn slightly brown
- Add 1 tsp of turmeric powder to the garlic cloves
- Add the chopped onions, boiled beans, and corn to the pan and let it saute for 5 minutes till the entire mixture starts to wilt
- Season with salt for taste
- Finally, add the boiled and dried penne pasta and mix it well
- Once the pasta is properly mixed, add 1 cup of vegetable broth and instantly keep aside once the broth is warm. If you leave the pan with the vegetable broth on the gas, the broth will evaporate and dry up the pasta.
- Season the pasta with the badia seasoning as per taste
That’s it, the penne pasta is prepared and ready to go. With the vegetable broth, the pasta would taste a little soupy and more filling. You can serve the pasta with mozzarella cheese on the top if needed.
