Tasty, easy to cook sauteed garlic vegetable pasta! Flavored with marinara sauce, peppers, onions and more.
Over the past few days, I had shared with all of you Mishika’s favorite vegetable pasta on my instastories and found that you guys were really loving it. As most of you were asking me about the recipe, I decided to create a blog post with some easy to cook instructions, so that you can also try it in your kitchen.
This is such a crazy time with all of us quarantined at home – cooking at home has become the normal norm. To spice things up so that we are not too bored of repeating the same dishes again and again, I have been trying to get as creative as possible with our usual dinners. As you all know, that in the current scenario with grocery stores running low on stock you can still create this pasta with just three ingredients – peppers, onions and roasted garlic marinara sauce. Feel free to add any other vegetables to the pasta, it will still taste great no matter what.
P.S. Sorry for not taking such great pictures of the dish as I was trying to click them in the night. And once the pasta is ready it is very hard to have any leftover for the next day as we all love it so much especially Mishika who loves eating rounds of it 🙂

Over a few years, I have played around with many different versions of the recipe with different marinara sauce and spices. I found that if you are making it for the kids, then this pasta tastes best with regular marinara sauce or the roasted garlic marinara sauce as they both are mild and tasty for kids to eat.

INGREDIENTS TO COOK
- 1 medium onion (chopped or thin slices)
- 1 medium green pepper (chopped or thin slices)
- 1 tomato; chopped (if you want to add fresh tomatoes as you are already adding marinara sauce)
- Organic marinara sauce (original or garlic roasted)
- 2-3 minced garlic cloves
- 1 lb spaghetti pasta
- 2 tablespoons olive oil
- 1 tablespoon oregano
- 1 tablespoon turmeric powder
- 1/4th cup grated Mozzarella cheese (optional)
- Salt to taste
PREP TIME
30-40 minutes

INSTRUCTIONS TO COOK
PREPARING THE PASTA
Bring a big bowl of water to a boil in a pan. Add the spaghetti with 1-2 tsp of salt to the boiling water. The salt adds flavor to the pasta. Let the pasta boil till its tender and soft to eat. Then drain the pasta and set aside.
COOKING THE PASTA SAUCE
Chop the vegetables Saute the garlic in olive oil Saute the vegetables in the olive oil Add the spices Once cooked – add the marinara sauce Mix the entire mixture
- In a pan, saute 2-3 finely minced garlic cloves in olive oil until it starts to turn slightly brown
- Add 1 tsp of turmeric powder to the garlic cloves
- Add the chopped vegetables to the pan and let it saute for 5 minutes till the entire mixture starts to wilt
- Season with salt and oregano for taste
- Finally, add the marina sauce to it and mix it well and then keep it aside
FINAL STEP – ROASTED GARLIC VEGETABLE PASTA
As a last step, all you have to do is mix the drained pasta and the pasta sauce in the pan till the pasta is completely covered with the marinara mix. Serve with mozzarella cheese on the top if needed.

- 1/4 cup mozzarella cheese grated
- salt
